Ingredients
  

  • 2 cups fresh strawberries
  • 1/4 cup erythritol or monk fruit sweetener
  • 1 tbsp lemon juice
  • 1/2 cup unsweetened coconut milk
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Wash, hull, and dry the strawberries.
  • Blend strawberries, sweetener, lemon juice, coconut milk, vanilla, and salt until smooth.
  • Adjust sweetness as needed.
  • Pour mixture into a freezer-safe container and freeze for 2 hours.
  • Stir to prevent ice crystals, then freeze for another 2-3 hours.
