Ingredients

For the salad

  • 1 pound 454 g 93% lean ground beef
  • 8 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1 cup chopped dill pickles
  • 1/2 cup shredded reduced-fat cheddar cheese
  • 1/2 small red onion finely diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Cooking spray if needed

For the sauce

  • 1/2 cup plain nonfat Greek yogurt
  • 2 tablespoons light mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon dill pickle juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Black pepper to taste

Instructions

  • Wash and thoroughly dry the romaine. Chop it into bite-sized pieces, halve the tomatoes, dice the onion, and chop the pickles.
  • Heat a large skillet over medium-high heat. Add the ground beef and break it into small crumbles. Add the garlic powder, onion powder, smoked paprika, black pepper, and salt.
  • Cook for approximately 7–10 minutes, stirring as needed, until the beef is browned and reaches an internal temperature of 160°F (71°C). Drain excess fat carefully if necessary.
  • In a bowl, whisk together the Greek yogurt, light mayonnaise, ketchup, mustard, pickle juice, garlic powder, onion powder, and black pepper until smooth.
  • Divide the romaine among four bowls. Distribute the cooked beef, tomatoes, pickles, onion, and cheese evenly over the lettuce.
  • Drizzle each bowl with one-quarter of the dressing and serve immediately.
