Allan
This Weight Watchers Vanilla Protein Cake is a soft, lightly sweet snack cake with classic vanilla flavor and a tender crumb. Greek yogurt, applesauce, and vanilla protein powder make it a more protein-focused alternative to a traditional snack cake. It is easy to bake in one pan, portion into eight squares, and serve plain or with fresh berries. It is a practical dessert to enjoy while keeping track of your personal WW Points.

- 1 cup 120 g all-purpose flour
- 1 scoop 30 g vanilla protein powder
- 2 large eggs
- ½ cup 120 g plain nonfat Greek yogurt
- ½ cup 120 g unsweetened applesauce
- ⅓ cup about 65 g granulated baking sweetener
- ½ cup 120 ml unsweetened almond milk
- 1 teaspoon vanilla extract
- 1½ teaspoons baking powder
- ¼ teaspoon fine salt
Preheat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
In a medium bowl, whisk together the flour, protein powder, baking sweetener, baking powder, and salt.
In a separate bowl, whisk the eggs, Greek yogurt, applesauce, almond milk, and vanilla extract until smooth.
Add the wet ingredients to the dry ingredients. Fold gently until no dry flour remains. The batter should be thick but spreadable. Add a little extra almond milk, one tablespoon at a time, if needed.
Transfer the batter to the prepared pan and spread it evenly into the corners.
Bake for 20–25 minutes, checking from 20 minutes. The cake is ready when the center is set and a toothpick comes out clean or with a few moist crumbs.
Cool in the pan for 15–20 minutes, then lift out and cool further before cutting into eight equal squares.
