I was in the process of self-discovery recently while I sat down with a recipe and made it, check this out—I put avocados into brownies! I know that seems strange, but stay with me here! These Keto Avocado Brownies were so wonderful that I could not bear not sharing the recipe with you guys.
But What’s the Big Deal with Avocados?
I obviously know what you are thinking – why avocado? Well, they provide creaminess which adds a great texture so that after blending, they can not be easily seen. Also, since they are full of healthy fats, these brownies are keto friendly.
Ingredients
You don’t require anything too special. All you need is:
- 2 ripe avocados: Preferably soft ones.
- 1/2 cup cocoa powder: Unsweetened chocolate chips are a good option. They give the chocolate flavor without the sweetness.
- 1/2 cup almond flour: Helps lower carb count.
- 2 eggs: These help everything stick correctly.
- 1/2 cup sweetener: I usually use erythritol, but it doesn’t really matter as long as you get what you are comfortable with.
- 1 tsp baking powder: A small amount for raising purposes.
- 1 tsp vanilla extract: Enhances the taste well.
- Optional: 1/2 cup dark chocolate chips: Use them if you love chocolate!
Now let’s bake!
It is incredibly easy to prepare these brownies:
The Avocados Go Smash: Take your soft avocados and mash them into a paste. If you don’t want to waste time, just blend them up for a nice creamy smoother texture.
Put It All Together: Place the avocado puree in the bowl, followed by the dried cocoa, blanched almond meal, the eggs, sweetener, dry yeast and vanilla extract. Blend away until you reach a thick, dark mixture suitable for brownie batter consistency. When making use of chocolate chips add them at this point.
Put In Oven: Transfer the batter into an oiled casserole and bake at 350 degrees for 20 to 25. The batter should be just slightly gooey in the center but quite set around the edges. But first, allow them to cool a little before cutting them out. If you can’t then there’s a lot of self-control required.
What To Expect When Baking These Brownies
I mean these brownies are a straight-up dessert. The fudgy brownies are so good that one would not know there is avocado in there. This was my preferred way to curb my sweet tooth whilst remaining diet aware.
