My Personal Experience
The first time I made a keto version of a French Dip, I was skeptical. Would the bread hold up to dipping? Could I get the same deep flavors without traditional ingredients?
After a few experiments, I found the perfect balance. The slow-cooked beef is incredibly tender, the au jus is packed with flavor, and the keto bread holds up beautifully—no soggy mess!
Now, this is one of my go-to comfort meals, and I know you’ll love it too!
Required Equipment
- Slow Cooker or Instant Pot – This is essential for achieving fall-apart tender, juicy beef. The long, slow cooking process allows the meat to absorb all the rich flavors, making every bite incredibly satisfying. If you’re short on time, an Instant Pot can cut down cooking time significantly while still giving you that deep, slow-cooked flavor. Either way, this is the heart of the recipe—without it, you won’t get that melt-in-your-mouth texture that makes French Dip so special.
- Large Skillet – Searing the beef before slow cooking is a game-changer! It locks in flavor, creates a rich caramelized crust, and adds an incredible depth to the final dish. If you’ve ever wondered why some dishes taste better than others, it’s often because of this one simple step. A heavy-duty skillet works best to get that perfect golden-brown sear.
- Mixing Bowls – If you’re making keto bread rolls to accompany your French dip, you’ll need a good set of mixing bowls to prepare the dough. I always find that using the right-sized bowl makes a difference—too small, and you’ll have ingredients flying everywhere; too big, and it feels like overkill.
- Baking Sheet & Parchment Paper – Again, if you’re opting for homemade keto-friendly rolls, this will help prevent sticking and ensure an even bake. There’s nothing worse than going through all the effort of making keto bread only to have it stick to the pan and fall apart. A parchment-lined baking sheet makes cleanup a breeze, too!
- Ladle & Strainer – The au jus (the flavorful dipping sauce) is one of the best parts of this dish. A ladle makes it easy to serve, and a fine-mesh strainer ensures a smooth, rich, and flavorful sauce without any unwanted bits. There’s something so satisfying about dipping tender beef into a warm, silky broth—it’s what makes this dish stand out.
Ingredients & Substitutions
For the Beef
- 2.5 lbs chuck roast – A flavorful, well-marbled cut perfect for slow cooking.
- 2 cups beef broth (low-sodium) – Forms the base of the au jus.
- 1 tbsp coconut aminos – Adds savory depth.
- 1 tsp garlic powder – Enhances the overall flavor.
- 1 tsp onion powder – Adds a mild sweetness.
- 1/2 tsp black pepper – Provides a subtle kick.
- 1/2 tsp salt – Adjust based on your broth’s sodium content.
- 1 tbsp olive oil – For searing the beef.
For the Keto Bread
- 1 1/2 cups almond flour – A low-carb base that keeps the bread sturdy.
- 1/4 cup coconut flour – Helps absorb moisture and creates a better texture.
- 1 tbsp psyllium husk powder – Makes the bread chewy and firm.
- 1 tsp baking powder – Provides a slight rise.
- 3 eggs – Essential for structure and texture.
- 1/4 cup melted butter – Adds richness and softness.
- 1/2 cup warm water – Helps bind the dough.
How to Make Keto French Dip
- Sear the Beef – Heat olive oil in a skillet over medium-high heat. Sear the chuck roast on all sides until deeply browned (about 3-4 minutes per side).
- Slow Cook the Beef – Transfer the beef to a slow cooker. Add beef broth, coconut aminos, garlic powder, onion powder, salt, and pepper. Cover and cook on low for 6-8 hours (or high for 4-5 hours) until the beef is fall-apart tender.
- Make the Keto Bread – Preheat oven to 350°F (175°C). In a bowl, mix almond flour, coconut flour, psyllium husk, baking powder, and salt. In another bowl, whisk eggs, melted butter, and warm water. Combine both mixtures until a dough forms. Shape into small rolls, place on a baking sheet, and bake for 20-25 minutes.
- Shred & Slice the Beef – Once cooked, remove the beef from the slow cooker and let it rest. Slice it thinly against the grain for the best texture.
- Prepare the Au Jus – Strain the cooking liquid, then simmer for 5 minutes to concentrate the flavors.
- Assemble & Serve – Slice the keto bread, pile on the beef, and serve with hot au jus for dipping.
Tips for the Best Keto French Dip
- Slice the beef thinly – The thinner, the better for the best texture.
- Let the bread cool – Keto bread holds up better after cooling.
- Use a high-quality broth – The au jus is all about flavor, so a good broth is essential!
Optional Additions
- Cheese – Melt provolone or Swiss on top for extra richness.
- Horseradish Sauce – Adds a bold, tangy kick to the sandwich.
Storage & Reheating
- Fridge – Store beef in the broth for up to 4 days.
- Freezer – Shredded beef can be frozen for up to 3 months.
- Reheat – Warm the beef gently in a pan with a little broth to keep it juicy.
