My Personal Experience

I’m a huge fan of cinnamon rolls, and when I first started my keto journey, I really missed those bakery-fresh rolls. After a bit of experimenting, I came up with this recipe, and it’s been a game changer. I remember the first time I tried these—I was shocked by how close they were to the real thing. The texture of the dough is spot on, and the sweet cinnamon filling hits the right notes every time. Now, every time I get a craving for cinnamon rolls, I can make these in just a few simple steps, and they always hit the spot!

Required Equipment

To make these delicious keto cinnamon rolls, you’ll need just a few basic pieces of kitchen equipment:

  • Mixing Bowls: A few large mixing bowls are essential for preparing the dough and the cinnamon filling. I love using a stainless steel mixing bowl because it’s sturdy and easy to clean.
  • Baking Sheet: You’ll need a baking sheet to bake your rolls on. I recommend a non-stick baking sheet to ensure the rolls come out easily without sticking.
  • Rolling Pin: This is key for rolling out the dough. A good quality rolling pin will make the process smoother, especially when working with keto dough, which tends to be a little more delicate than regular dough.
  • Spatula: A spatula is perfect for spreading the filling evenly onto the dough before rolling it up. It helps get that cinnamon sugar spread evenly without tearing the dough.
  • Parchment Paper: Lining your baking sheet with parchment paper ensures easy clean-up and prevents the rolls from sticking.

Ingredients & Substitutions

For this keto cinnamon roll recipe, you’ll need the following ingredients:

For the Dough:

  • Almond Flour (2 cups): Almond flour is the base for the dough. It’s low-carb and has a mild flavor that pairs perfectly with the cinnamon filling. If you don’t have almond flour, you can try using coconut flour, but you’ll need to adjust the amount since coconut flour is more absorbent.
  • Baking Powder (1 tablespoon): Helps the dough rise. Make sure you use a gluten-free, aluminum-free baking powder for the best results.
  • Butter (1/4 cup, melted): Gives the dough a rich flavor and helps keep it soft. You can substitute with ghee for a dairy-free version.
  • Egg (1 large): Acts as a binder and adds structure to the dough. If you’re egg-free, you can try using flax eggs (1 tablespoon flaxseed meal + 3 tablespoons water, let sit for 5 minutes).
  • Cream Cheese (1/4 cup, softened): Adds creaminess to the dough. For a dairy-free version, you could try using a non-dairy cream cheese alternative.
  • Stevia or Erythritol (2 tablespoons): Sweetens the dough without adding carbs. You can use other keto-friendly sweeteners like monk fruit or allulose.
  • Vanilla Extract (1 teaspoon): Adds a subtle sweetness and rounds out the flavor.

For the Cinnamon Filling:

  • Butter (2 tablespoons, softened): Acts as the base for spreading the cinnamon mixture.
  • Stevia or Erythritol (2 tablespoons): Sweetens the filling.
  • Ground Cinnamon (2 teaspoons): Provides the warm, aromatic flavor.

For the Cream Cheese Glaze:

  • Cream Cheese (2 tablespoons, softened): Forms the base of the glaze.
  • Butter (1 tablespoon, melted): Adds richness to the glaze.
  • Stevia or Erythritol (1 tablespoon): Sweetens the glaze.
  • Vanilla Extract (1/2 teaspoon): Adds a touch of flavor.

How to Make Keto Cinnamon Rolls

Here’s a step-by-step guide to making these delicious rolls:

  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper and set it aside.
  2. Prepare the Dough: In a large mixing bowl, combine almond flour, baking powder, and sweetener. Add melted butter, egg, cream cheese, and vanilla extract. Mix well until the dough comes together. If the dough feels too wet, add a tablespoon of almond flour at a time until it’s manageable.
  3. Roll Out the Dough: Place the dough between two sheets of parchment paper and roll it out into a rectangle, about 1/4 inch thick. Lightly dust with almond flour if needed.
  4. Prepare the Filling: In a small bowl, mix cinnamon and sweetener. Spread softened butter evenly over the rolled-out dough, then sprinkle the cinnamon mixture evenly on top.
  5. Roll the Dough: Carefully roll the dough into a log. Use the parchment paper to help if the dough is delicate. Slice the log into 8 even pieces.
  6. Bake the Rolls: Place the rolls onto the prepared baking sheet. Bake for 15-20 minutes, or until golden brown on top.
  7. Prepare the Glaze: While the rolls bake, mix cream cheese, melted butter, sweetener, and vanilla extract in a small bowl until smooth.
  8. Glaze the Rolls: Once the rolls are done, let them cool for a few minutes before drizzling the glaze over the top.

Tips for This Recipe

  • If the dough is too sticky, add extra almond flour a little at a time until it’s manageable.
  • Roll the dough gently to avoid tearing.
  • Adjust the sweetness of the filling and glaze to your taste.

Optional Additions

  • Add chopped nuts like pecans or walnuts to the cinnamon filling for a little extra crunch.
  • Try adding a dash of nutmeg for a more aromatic flavor profile.
  • Top with sugar-free chocolate chips or a drizzle of keto chocolate for a decadent touch.

Serving Ideas

These keto cinnamon rolls are perfect for breakfast or dessert. Serve them with a hot cup of coffee or tea for a cozy morning treat, or enjoy them as a low-carb snack throughout the day.

Storage Recommendation

Store any leftover rolls in an airtight container in the fridge for up to 5 days. You can also freeze them for up to 2 months. To reheat, simply microwave them for 20-30 seconds or warm them up in the oven at 350°F for 5 minutes.

This recipe has quite a few flaws. I bet its great once its updated. The butter and sugar quantity needs to be divided into 3 areas of dough, cinnamon mixture and glaze. Currently listed as one lump sum. The vanilla is listed as an ingredient but isnt included in instructions. And the baking powder is listed in the top overview area but not actual ingredients. It took me over an hour to try to make these and I tried to divide some ingredients and the dough was way too wet so didnt cook properly.

    1. Thank you so much for your thoughtful feedback! I truly appreciate you taking the time to share your experience with the recipe. I’m sorry to hear you ran into challenges while making the cinnamon rolls—that’s definitely not the experience I want anyone to have!

I’ve carefully reviewed your concerns and have made updates to the recipe to address them. Here’s how I’ve improved it:

Butter and Sweetener Division: I’ve clearly separated the butter, sweetener, and vanilla extract into three sections—dough, cinnamon filling, and glaze. This makes it much easier to follow and ensures accuracy.

Vanilla in Instructions: I’ve included the vanilla extract in the step-by-step instructions where it’s added to the dough. No more confusion!

Baking Powder Mention: Baking powder is now consistently listed in both the ingredients and instructions to avoid any oversight.

Dough Consistency: I’ve added guidance for handling keto dough, including tips to adjust with a little extra almond flour if the dough feels too wet. This ensures the dough is easier to work with and bakes properly.

These changes should make the recipe much clearer and easier to follow. If you’re open to giving it another try, I’d love to hear how it works out for you with these updates!

Thank you again for your feedback—it’s invaluable in helping improve recipes for everyone in the keto community. 😊

Very delicious, but I could not get it to roll for me without cracking excessively. They looked more like cinnamon clumps than cinnamon rolls. Not sure what I did wrong.

    1. Thank you for trying the recipe and sharing your experience! Cracking can sometimes happen if the dough is too dry or overworked. A few tips to help next time:

Make sure the dough is slightly sticky but not overly wet. If it feels dry, you can add a teaspoon of water or almond milk at a time to help.
Roll the dough gently and evenly—too much pressure can cause cracking.
Let the dough rest at room temperature for 5-10 minutes before rolling. This can make it more pliable.
If the dough seems brittle, it might also be due to temperature; colder dough can crack more easily.
I’d love for you to try it again and let me know if these tips help! 😊
